After our recent trip to Mexico, I’ve been thinking a lot about the incredible ancient wisdom found in our traditional foods. Today, I want to share something truly special that dates back to pre-Hispanic times: Pinole.
If you haven’t heard of Pinole, you’re about to discover your new favourite high-energy snack. It’s a simple, toasted corn powder mixed with cinnamon and sugar, but its history is legendary.
What is Pinole?
Pinole (from the Nahuatl word pinolli) is a staple of the Rarámuri (Tarahumara) people of Northern Mexico. Known as some of the greatest long-distance runners in the world, the Rarámuri rely on Pinole for incredible endurance.
It’s essentially a nutrient-dense, toasted corn flour. Because the corn is toasted, it has a beautiful nutty flavour that pairs perfectly with the warmth of cinnamon. It’s versatile, portable, and provides a slow release of energy that’s perfect for a busy morning or a pre-workout boost.
How to Enjoy Pinole
- As a Drink: Mix a few tablespoons into hot or cold milk (or water) for a comforting, earthy beverage.
- As a Porridge: Cook it with a bit more liquid for a hearty breakfast similar to oatmeal.
- The Traditional Way: Eat it as a powder snack (careful not to inhale while eating—it’s dry!), or mix it into cookies and smoothies.

Authentic Mexican Pinole Recipe
This recipe transforms simple corn into a fragrant, toasted powder that lasts for weeks in your pantry.
Ingredients:
- 2 cups whole dried yellow corn (If you can’t find whole dried corn, you can use cornmeal or Maseca as a shortcut, but whole corn gives the best flavour!)
- 1 stick of Mexican Cinnamon (available on MexicanThings.ie)
- 2-3 tablespoons Piloncillo (grated) or brown sugar
- Optional: A pinch of ground cloves or cocoa powder for extra depth.
Instructions:
- Toast the Corn: Place the dried corn in a large, heavy skillet over medium heat. Keep the corn moving! You want to toast it until it turns a beautiful golden brown and starts to “pop” or crackle slightly. This should take about 10-15 minutes. The smell will be incredible, like toasted nuts and popcorn!
- Add the Cinnamon: About halfway through toasting, add the cinnamon stick to the pan to toast it slightly and release its oils.
- Cooling: Remove the pan from the heat and let the corn and cinnamon cool completely. This is a vital step, don’t grind it while hot!
- Grind to a Powder: Once cooled, place the toasted corn and the cinnamon stick into a high-powered blender or a spice grinder. Process until it reaches a fine, flour-like consistency.
- Sweeten: Sieve the powder into a bowl to remove any large bits. Stir in your grated piloncillo (or sugar).
- Store: Keep your Pinole in an airtight jar. It stays fresh for a long time and is ready whenever you need an energy boost!
Pinole is a beautiful reminder that sometimes the simplest ingredients—corn, cinnamon, and a little heat, are the most powerful.
