As part of the Mexican holy trinity of dried peppers (with the Ancho, Pasilla & Guajillo), the Mulato chilli is a staple for Mole sauces, along with other authentic Mexican sauces, salsas and marinades. It’s simple to rehydrate these dried chilies, just let them soak in water for about 30 minutes.

Or grate them into a fine dust for a sweeter alternative to traditional chilli powder. Roughly crushed, Mulato Chillies have an excellent flavour to pair with rich desserts like ice cream and chocolate cake, as well as fresh fruit with rich tastes like raspberries and blood oranges.

Description

Unlike many Mexican chillies this Chilli is actually ranked very low on the heat scale, most people can eat Mulato Chillies like banana or bell peppers and not experience too much of a heat boost. The Mulato measures in at 2,500 to 3,000 Scoville Heat Units on the Scoville Scale. Compare that to the popular Jalapeno Pepper, which averages about 5,000 SHU and you’ll see the Mulato is about half as hot.

The heat increases the longer the peppers are on the plant, so a typical Mulato Chilli is usually hotter than a typical Ancho Chilli.
