Description
Pozole is a delicious Mexican soup (stew), with corn as the main ingredient. But no ordinary corn, these corn kernels have been treated with a process of nixtamalization. This process ensures that the hard outer husk of the grain is released, which makes the grains burst during cooking.
Then you have the main ingredient for one of Mexico’s national festival dishes: POZOLE.
To facilitate this process, this pozole is partially cooked. Of course, the meat (pork, chicken or prawn) should be added. After a few hours (3-4) of cooking you can serve it and add lime juice, chopped raw onions, dried oregano, avocado chopped, etc (your choice) and can be served with freshly made tostadas (fried crispy tortillas).
Ingredients: pozolero corn, water, salt, 0.01% sodium metabisulfite (E223).
