Fabiola and the MexicanThings.ie team are taking a short break! We’ve headed back to Mexico to soak up some sun, visit family, and, of course, find even more culinary inspiration to bring back to Ireland.

While we are away, we didn’t want to leave your kitchens empty! We’ve looked back at the last year and gathered our most-loved recipes and tips into one “Greatest Hits” collection. Whether you missed them the first time or just need a reminder for dinner tonight, these are the dishes that defined our year.

🗓️ Your 2026 Mexican Recipe Diary

To help you plan your cooking year, we’ve put together a list of notable dates in the Mexican calendar. Mark these down so you know exactly when to stock up on corn husks, chiles, and mole!

  • February 2nd – Día de la Candelaria: The official end of the Christmas season. Traditionally, whoever found the “baby Jesus” in the Three Kings Bread (Rosca de Reyes) in January has to host a party with plenty of Tamales.
  • May 5th – Cinco de Mayo: While more famous abroad than in Mexico, it’s a great excuse for a fiesta! Think Tacos al Pastor, fresh Guacamole, and cold Mexican Cokes.
  • September 16th – Mexican Independence Day: The biggest celebration of the year! This is the time for Chiles en Nogada (representing the colours of the flag) or a huge steaming pot of Pozole.
  • November 1st & 2nd – Día de Muertos: A beautiful time to remember loved ones. Mole is often served as it was a favourite of many, alongside Pan de Muerto (Bread of the Dead).
  • December 12th – Día de la Virgen de Guadalupe: A massive religious festival usually celebrated with street foods like Gorditas, Tamales, and Atole.
  • December 16th–24th – Las Posadas: Nine days of parties leading up to Christmas. You’ll need plenty of dried chiles for stews and hibiscus flowers for Ponche Navideño.
